The best kitchen knives

The main requirements for kitchen knives are strength, resistance to corrosion, quality of cut, and the ability to sharpen. As a rule, cheap knives have some characteristic, but do not have it. However, in the knife market there are manufacturers who make high-quality products, although their cost is often slightly off the charts. Who are they - the gurus of the knife business? Let's look at the best of them.

Kitchen knives: ranking of the very best

Among the best manufacturers of kitchen knives, we can highlight primarily Japanese brands, as well as several European ones. We will obviously not distribute them according to places, since they are all ideal in quality, and therefore do not need to be distributed according to rating places.

Zwilling J. A. Henckels

This is one of the largest and oldest manufacturers of kitchen knives in Germany. Different technologies can be used in production. For example, TWIN Select, Four Star, Four Star II and Professional “S” are created from a single piece of high-carbon stainless steel, ice-hardened for improved stain resistance. Forging is designed to improve edge retention, weight, balance and reduce the likelihood of metal abrasion. One of the company's features is that the blades are sharpened by hand to maintain the strength of the edge.

Kyocera

Japanese manufacturer of ceramic knives. The products have a number of advantages over steel. For example, ceramics can stay sharp much longer if you properly care for the knife. In addition, if the blade gets scratched, you still won't feel the metallic taste when it comes into contact with food, as often happens with steel utensils. However, Kyocera knives, like any other ceramic product, have only one drawback - they are quite fragile, prone to breakage, and sometimes even crumble. This is especially true when the product is used for chopping bones or frozen foods.

Kai

Again Japan, and again - super cool knives. There are whole legends about the quality of these products, which, however, is not surprising, because some of them have a price tag of 50,000 rubles. What makes these devices so special? Kai uses only the best materials to make knives. This is Damascus steel, alloys VG10, VG2, VG MAX, 6A/1K6, SUS420J2. The handles are made exclusively from Pakka wood, a generic term for laminated plywood made of multiple layers and infused with high-quality synthetic resins that help maintain the shape of the handle and provide long-term resistance to moisture and food. However, a whole book would not be enough to describe all the advantages of this manufacturer. But if you try, you will immediately understand everything!

Samura

The manufacturers didn’t write about this unless they were lazy, but these are not at all laudatory reviews of the knives, although they are simply excellent. The fact is that many consider this company to be Japanese, but in reality it seems to be a domestic manufacturer. However, this does not affect the quality of the products at all. Samura knives are incredibly sharp, easy to sharpen, very comfortable in the palm of your hand, lightweight and resistant to corrosion, and they are rightfully considered one of the best for the kitchen. All products are made from the best grades of steel: AUS8, AUS10, VG10.

Tojiro

And again Japan. These are high-performance knives that last for decades. Features include: use of the best steel (VG10, Damascus), exceptional corrosion resistance, hardness during continuous cutting, long lasting sharpness, handles are made from recycled wood. In addition, Tojiro produces different lines of knives: with a black oxide finish, for sushi, made entirely of molybdenum and vanadium steel, premium and budget products.

Arcos

Spanish quality, honed over centuries. These are professional products of the highest European quality. The basis of the blades is environmental stainless steel NITRUM - an alloy with alloying additives of vanadium and molybdenum, enriched with nitrogen. Thanks to the improved microstructure of raw materials, product blades always remain hard, durable, have excellent cutting power and durability. In fact, Arcos is the choice of many famous chefs who have long appreciated the quality of this manufacturer.

Mikazo

The Japanese brand MIKADZO (translated as “the action of the emperor”) presents models of kitchen knives designed for different purposes. Products differ not only in type, but also in materials of manufacture and steel composition. A wide range meets all consumer requirements. All of them are united by ideal quality, high wear resistance and beautiful design. Excellent balance, premium appearance, and exceptional quality characteristics provide a lifetime warranty on all Mikadzo knives.

Global

GLOBAL knives have been handcrafted in Japan for over 30 years and are developed using the finest raw materials. The production uses our own patented stainless steel - CROMOVA 18 Stainless Steel. It optimizes and improves the blade, protects it from abrasion and makes the steel particularly resistant to rust and corrosion. Two of the most innovative features of the products are their edges and the way they are balanced. Most instruments are sharpened or ground on both sides of the blade, much like the Western style. Separately, it is worth mentioning the GLOBAL design - in some cases, these are simply works of art that will delight you not only with functionality and quality, but also with a unique appearance.

steel CROMOVA 18

To summarize all of the above, I would like to say the following: of course, knives from these manufacturers will not be cheap, but you should understand that high-quality products will not be sold for pennies. If you still decide that only the best appliances belong in your kitchen, then you can safely choose any of the brands described above, and you will immediately appreciate the quality and convenience of these products.

Comments and feedback:

They mixed it... Next to the fantastic “Tojiro” there are some super-budget “Arkos”, and even “Kyotsera” was inserted here... Yes, no self-respecting chef will pick up ceramic crap!
It’s good that “Samura” was not called a purely Japanese brand. Although I respect the domestic manufacturer, I admire competent promotion, but I don’t like deception - “Samura” is unworthy of the rating.
I would include real Japanese in the rating. For example, the budget "Kanetsugu" or honkasumi "Konosuke".
