Family breakfast, lunch and dinner are an excellent occasion to gather together at one table, nothing should spoil the moment. What can we say about the celebrations! They must be held at the highest level! Restaurants and cafes always serve food at a certain temperature that meets quality standards. Who would like cold mulled wine or a sagging casserole? In addition, the main courses must be warm, otherwise the aesthetics of presentation will be disrupted, and this also leads to heaviness in the stomach after eating. Our body perfectly “understands” the difference between cold and hot soup.
Second hot courses in cafes, canteens and snack bars must be served at a temperature of 65-75 degrees, and in restaurants 80-90! Compliance with the technology is controlled by special services.
What plates store heat well?
It has long been noticed that in deep dishes with sides, food stays hot longer. But the temperature is also greatly influenced by the material.
- Ceramic tableware is made from clay mixed with various additives in the form of chalk, quartz and feldspar. It is hardened at high temperatures, resulting in an interesting porous structure.These plates are great for everyday use, but they must be handled carefully, as the glaze will chip when struck. Ceramic holds temperature perfectly.
- Wood can keep food warm for a very long time. It’s not for nothing that Italians traditionally put pizza on a wooden flat plate! In good establishments, the meat is served on wood, as the steak must retain its original heat and look appetizing.
These are the two main types of material that I can safely recommend. I just want to note that ceramics are less capricious. The wood will require special care; it needs to be wiped with linseed oil from time to time and dried in the oven. You can wash it with the usual detergent, but then be sure to wipe it and dry it well.
Is it necessary to change your favorite set?
In catering establishments, food is served on heated plates. All connoisseurs of good cuisine know very well that the preservation of the texture and shape of the prepared dish quite often depends on the temperature. For example, an airy omelette placed on a cold plate instantly loses its airiness, turning into a thin flatbread.
If the household dishes are in good condition, without chips and are completely satisfied in terms of dimensions, then there is absolutely no need to throw them away and buy new sets. You can use a trick to reheat before serving:
- Cups and mugs are pre-rinsed with hot water.
- Place the plates in the oven for ten minutes. Warming up to 80 degrees is usually enough.
- If the material allows, the dishes can be placed in the microwave for a minute.
- You can pour a bowl of hot water and place the plates there for 10-15 minutes. Then take them out and wipe them.
- Some dishwashers support a heating function: it is very convenient and there is no need to buy professional equipment.
It will be more difficult with porcelain plates; they don’t like too hot water, microwaves or dishwashers!
Cold salads and ice cream are best served, on the contrary, in chilled bowls. Just put it in the refrigerator for 10 minutes!
It is best if different sets are used for guests and for home dinners. But they should not gather dust in distant corners, but should periodically appear on the table and bring joy.
