What is the normal flame temperature of a gas stove?

Flame temperature depending on the selected mode

The folk method implies that certain liquids begin to boil only after reaching a specific flame combustion temperature. So, to boil olive oil you will need +250 degrees, for sunflower oil +200, and for corn oil only +150.
But this method is not highly accurate and is used on fairly old slabs.
What flame temperature of a gas stove is needed to cook different dishes?
